167. Sour food items

Sour food items heal and nurture liver and gall bladder. They help to create positive emotions like joy and happiness. They help the body’s immune system. They cleanse the body tissues and increase the absorption of the minerals.

Limes, lemons, pineapple, apple, cider, candies, pickles, yogurt, cheese, sour cream, soy sauce and vinegar fall under this category. Pickling in vinegar softens the food and makes it tastier and easily edible.

The health benefits of Lime and Lemon include the reduction of body weight, skin care and eye care. They remove constipation and promote good digestion. They help in treating many other health problems like respiratory disorders, urinary disorders and skin disorders.

In fact lime is the first fruit we think of when we need a medicinal fruit which has stood the test of time. Refreshing beverages, cool drinks, pickles, jams, jellies, snacks, candies taste better with limes and lemons.

Pineapples are consumed fresh or canned, juiced or sliced. They are found in a wide array of food stuff– dessert, jam, yogurt, ice cream and candy.

Yogurt is milk fermented by yogurt cultures. These bacteria ferment the lactose in the milk to Lactic acid which in turn acts on the milk protein to give the yogurt its rich creamy texture and tangy taste. Cow’s milk is most commonly used to make yogurt. But milk obtained from water buffaloes, goats, mares, camels and yaks are used in different parts of the world.

Sour cream is obtained by fermenting regular cream with lactic acid bacteria. The cream thickens and turns sour. The name stems from the word souring meaning the production of lactic acid by bacterial fermentation.

Hundreds of types of Cheese are produced. Their styles, textures, and flavors depend on the origin of the milk (including the animal’s diet), whether or not pasteurized, the butter fat content, the bacteria and the mold used, the processing and the aging
